Capped composite is what most pool decks are actually built in, and it performs well, with board color deciding how the surface feels at midday. Both stay smooth underfoot for the life of the deck, which is what matters where everybody is barefoot.

Any surface does in full sun, and color matters far more than brand. Lighter grays and tans run noticeably cooler, and shade over part of the deck takes the question off the table there entirely.

Stainless costs very little at build time and it is what keeps a surround looking new years later.

Drainage first. Wide gapping, and a surface that sheds rather than ponds. After that it is cleaning. The slippery film on a pool deck is almost always algae, growing where the surface stays damp and shaded. It is not the board itself. Most textured composite and PVC boards are more slip-resistant wet than a smooth timber deck.
